March is here and Spring can’t be far behind. The snow is melting off and everybody’s ready for warmer weather.

And what’s Eureka Springs without a parade? The 22nd Eureka St. Patrick’s Street Parade will be on March 14th and follows the regular route down Spring Street.

The 33rd Victorian Classic will be on March 21st and is widely attended. It’s one of the hallmark events of Eureka Springs with all proceeds going to local charities. Much more this month, be sure to check out our list of events below.

Layers of melted chocolate and crushed peppermint candy brighten up these crisp and chewy bars. Use a rolling pin to break the candy into small bits for sprinkling.


10 tablespoons unsalted butter, divided
One 10-ounce package marshmallows
1 teaspoon peppermint extract
6 cups cocoa rice cereal such as Cocoa Krispies
One 12-ounce package semi-sweet chocolate chips
1/4 cup crushed peppermint candies or candy canes


Butter a 13 x 9-inch pan or line with parchment paper.

In a large pot, melt 4 tablespoons butter and the marshmallows, stirring occasionally. Once melted, turn off the heat and stir in the peppermint extract. Add the cereal and mix until the cereal is coated with the marshmallow mixture. Pour into the prepared pan and press into an even layer.

In a small pan, melt the remaining 6 tablespoons butter with the chocolate chips. Pour the chocolate mixture over the bars and spread with a spatula. Top with the crushed peppermint candy. Let cool before cutting into 24 bars (4 rows by 6 rows).

Tip: Cocoa-flavored rice cereal can be found at most supermarkets.

33rd Annual Victorian Classic Road Race. 10K Run- 2 Mile Run, 2 Mile Fun Run, & 2 Mile Walk. Host hotel is the Best Western Inn of the Ozarks where races begin and end. Put on by Eureka Springs Rotary Club with proceeds going to benefit local charities and/ or benefit. Contact will have parking for the races.
