<p>RECIPE</p>
<p>SAUSAGE HASHBROWN CASSEROLE</p>
<p>1    lb ground sausage, divided<br />
2    cups shredded cheddar cheese<br />
1    can (10 3/4 oz) cream of chicken soup<br />
1    cup sour cream<br />
1    container (8 oz) container of french onion dip<br />
1    cup chopped onion (optional)<br />
1/4    cup each red and green bell pepper, chopped (optional)<br />
salt and pepper to taste<br />
1    package (30 oz) frozen hash brown shredded potatoes, thawed</p>
<p>In a skillet, cook the sausage until browned. Drain well. In a large mixing bowl, combine the cheese, chicken soup, sour cream, french onion dip, chopped onion, bell peppers, salt and pepper. Fold in thawed hash brown potatoes. Reserve about 1/2 cup cooked sausage and combine remainder with hash brown mixture. Spread mixture in a 9&#215;13 greased baking dish. Top with remaining sausage. Bake at 350 degrees for about one hour or until casserole is golden brown. Cool about 10 minutes before serving.</p>

<p>Summer is really here, but at least the weather has been cooler the last few days, making outdoor activities more enjoyable. Some things going on in July are the Second Saturday Gallery Stroll, Fat Tire Festival and Opera in the Ozarks will be playing until July 17th, so don&#8217;t miss your chance to catch a fantastic performance this year. <p>RECIPE</p>
<p>Oreo Cookie Dessert Recipe<br />
    * 1 (18 ounce) package Oreo cookies, divided, crushed (save 3/4 cup)<br />
    * 1/2-1 cup butter or margarine, melted<br />
    * 16 ounces Cool Whip, divided<br />
    * 8 ounces cream cheese<br />
    * 1/4 cup powdered sugar<br />
    * 1 (3 1/2 ounce) box instant chocolate pudding mix<br />
    * 2 cups milk (3.4 ounce)<br />
    * 1 (14 ounce) can eagle brand sweetened condensed milk</p>
<p>   1. Pour crushed cookies in 9&#215;13 glass dish.<br />
   2. Melt butter, pour over cookies.<br />
   3. Mix 1/2 of the cool whip, cream cheese and powdered sugar, spread on top.<br />
   4. Mix pudding with milk and sweetened condensed milk; beat until thick, spread on top.<br />
   5. Spread on other 8 oz Cool Whip.<br />
   6. Sprinkle with leftover cookies.<br />
   7. Refrigerate over night.</p>

1/3 c. caramel ice cream topping</p>
<p>Heat oven to 325 degrees. Combine cake mix and butter in large bowl, mixing at low speed until crumbly. Set aside 1 cup of mixture for topping. Press remaining mixture in bottom and 1 1/2 inches up sides of ungreased 9 or 10 inch springform pan.</p>
<p>In same bowl, combine cream cheese, sugar, flour, and rum extract; beat until smooth. Add eggs and mix well. Stir in crushed candy bars and pour into crust lined pan. In small bowl combine reserved crumb mixture, brown sugar, and pecans; blend well. Sprinkle evenly over filling.</p>
<p>Bake at 325 degrees for 70-85 minutes or until center is set and topping is golden brown. Remove from oven and drizzle caramel topping over top. Bake for 8-10 minutes more to set topping. Cool 30 minutes.</p>
<p>Run knife around sides of pan to loosen. Cool completely. Remove sides of pan and refrigerate 4-5 hours or overnight. Store in refrigerator. 16 serving.</p>

<p>Snow, snow, snow. We&#8217;ve had our share this year. The snow today is just beautiful and hasn&#8217;t caused any driving problems in our area. The road crews have done a terrific job keeping the highways and main streets open this winter. I know I&#8217;ve shoveled more snow this year that any I can ever remember.</p>
<p>For February, we are trying out a new dessert &#8211; Chocolate-Covered Cherry Pie. It&#8217;s especially good. Why not give it a try? The recipe is below. Speaking of February, we still have a couple of vacancies for Valentine&#8217;s Day (Sunday) and some vacancies the remaining weekends and weekdays in February. Be sure to check our Valentine Month special if you can come anytime in February except Valentines&#8217; weekend. So why wait? We are open year-around, so it’s not too soon to reserve your special dates.</p>

Chocolate-Covered Cherry Pie</p>
<p>Prep: 30 min., Bake: 30 min., Chill: 8 hrs. Using a convenient ready-made crust allows time to dip cherries in chocolate for an eye-popping pie topper.</p>
<p>1 (12-ounce) package semi-sweet chocolate morsels<br />
1/2 cup whipping cream<br />
1/4 cup butter, cut into pieces<br />
1 (6-ounce) ready-made chocolate crumb piecrust<br />
1 (21-ounce) can cherry pie filling<br />
1 (8-ounce) package cream cheese, softened<br />
1/3 cup powdered sugar<br />
1 large egg<br />
1/4 teaspoon almond extract<br />
16 maraschino cherries with stems<br />
2 cups frozen whipped topping, thawed</p>
<p>Microwave morsels and cream in a microwave-safe bowl at MEDIUM (50% power) 1 to 2 minutes or until chocolate begins to melt. Whisk in butter until smooth. Let cool, whisking occasionally, 5 to 10 minutes or until mixture reaches spreading consistency. Spoon half of chocolate mixture into piecrust. Cover and chill remaining chocolate mixture.<br />
Spoon cherry pie filling evenly over chocolate mixture in piecrust. Place piecrust on a baking sheet.</p>
<p>Beat cream cheese and next 3 ingredients at medium speed with an electric mixer until smooth. Pour cream cheese mixture evenly over cherry pie filling. (Pie shell will be very full but will not overflow when baking.)</p>
<p>Bake at 350° for 30 minutes or until center is set. Remove from oven, and cool on a wire rack. Cover and chill 8 hours.</p>
<p>Drain maraschino cherries on paper towels; pat dry.</p>
<p>Microwave reserved chocolate mixture at MEDIUM (50% power) 1 minute. Remove from microwave; stir until spreading consistency, reheating if necessary.</p>
<p>Dip cherries in chocolate mixture, and place on a baking sheet lined with wax paper; chill 15 minutes. Spread remaining chocolate mixture evenly over top of pie. Spoon 8 dollops of whipped topping around outer edge of pie; place 2 chocolate covered cherries in center of each dollop.</p>
<p>Yield: Makes 8 servings</p>
