Don&#8217;t miss Scooting in the Ozarks, Jazzy Weekend, and the Second All American Weekend and of course, Bikes Blues and BBQ is the last weekend of the month in Fayetteville. There&#8217;s always plenty to do and enjoy in Eureka Springs.</p>

<p>RECIPE</p>
<p>PECAN-PEACH COBBLER</p>
<p>12 to 15 fresh peaches, peeled and sliced*<br />
3    cups sugar<br />
1/3    cup all-purpose flour<br />
1/2    teaspoon nutmeg<br />
1 1/2    teaspoons vanilla<br />
2/3    cup butter<br />
2    boxes refrigerated piecrusts (4 piecrusts total)<br />
1/2     cup chopped pecans, toasted<br />
1/4    cup sugar<br />
vanilla ice cream</p>
<p>Combine first 4 ingredients in a dutch oven and let stand 10 minutes or until sugar dissolves. Bring peach mixture to a boil over medium heat, reduce heat to low and simmer 10 minutes or until tender. Remove from heat, add vanilla and butter, stirring until butter melts.</p>
<p>Unroll 2 pie crusts. Sprinkle 1/4 cup pecans and 2 tablespoons sugar evenly over 1 piecrust, top with other piecrust. Roll into a 12-inch circle, gently pressing pecans into pastry. Cut into 1 1/2 inch stips. Repeat with remaining 2 piecrusts, 1/4 cup pecans and 2 tablespoons sugar.</p>
<p>Spoon half of peach mixture into a lightly greased 13&#215;9 inch baking dish. Arrange half of pastry strips in a lattice design over top of peach mixture.</p>
<p>Bake at 475 degrees for 20 to 25 minutes or until lightly browned. Spoon remaining peach mixture over baked pastry. Top with remaining pastry strips in a lattice design. Bake 15 to 18 more minutes. Serve warm or cold with vanilla ice cream.</p>
<p>*2 (20 ounce) packages frozen peaches may be substituted. Reduce sugar to 2 cups, flour to 3 tablespoons and nutmeg to 1/4 teaspoon.</p>
<p>Note: To make ahead, let baked cobbler cool, cover and freeze up to 1 month. Thaw in refrigerator overnight. Uncover and reheat at 250 degrees for 45 minutes.</p>

<p>We hope you are faring well in this summer heat. We&#8217;ve had to water our plants daily to keep them from dying since we haven&#8217;t had any measurable rain in weeks . Hopefully the worst is behind us and cooler days will be arriving soon. We&#8217;ve had many visitors from Texas in the last few weeks that come to the Ozark Mountains for a respite from the sweltering heat. The evenings have been pleasant with temperatures in the 70&#8217;s and a few guests have chosen to have breakfast outside to enjoy the cool mornings. Kids will be going back to school soon and we hope you&#8217;ll take some time for yourself to relax in Eureka Springs.</p>
<p>There&#8217;s always plenty of things going on in Eureka Springs and this month is no exception. Events this month include the 17th Annual Yards and Yards of Yard Sales. Hosted August 5th and 6th, Yard Sale bargains will be all around town. Maps will be available at the Chamber of Commerce so you can locate the sales in our city-wide sale.  New this year, the Eurekan Biking-swimming-foot race triathlon, with lots of activities for family members of the athletes, August 12-14. Participate or come watch the athletes compete for the title of THE EUREKAN.  Join us for our 2011 Annual Bluegrass Celebration August 19-21! Rain or Shine. Bluegrass groups such as Mountain Sprout, Backroads Bluegrass Band, Steve Jones&#8217; Band, Cletus Got Shot, Arkansas Red, Hogscalders, Hogeye Ramblers, Blackberry Winter and Gospel-themed ensembles from the Pine Mountain Theatre and the Ozark Mountain Hoe-Down will perform. The 19th Annual Volkwagen weekend will be August 26-28 featuring all things VW. There&#8217;s even a Banjo Rally featuring banjos from all over the US. Sounds like great fun!</p>

<p>RECIPE</p>
<p>CRESCENT ROLL BREAKFAST CASSEROLE</p>
<p>1        tube crescent rolls<br />
6-8    slices of thickly sliced or grated pepper jack cheese<br />
4        eggs<br />
3/4     cup milk<br />
2        tablespoons dried onion or minced green onion<br />
6        slices bacon (fried and crumbled) or thinly sliced ham<br />
salt and pepper</p>
<p>Separate &#038; press dough in sprayed 9&#215;13” pan. Press into bottom and 1” up each side of pan, sealing seams. Place cheese slices over the dough, sprinkle with bacon. In a small bowl, combine eggs, milk, salt and pepper, pour over cheese slices. Cover loosely with foil. Bake at 350 degrees for 30 minutes or until tested done. 6-8 servings.</p>

<p>CHERRY JUBILEE CHEESECAKE BARS</p>
<p>1    box Betty Crocker® SuperMoist® cherry chip cake mix<br />
1/2    cup butter or margarine, softened<br />
2    packages (8 oz each) cream cheese, softened<br />
1    container Betty Crocker® Rich &#038; Creamy cherry frosting<br />
3    eggs</p>
<p>Heat oven to 325°F. In large bowl, beat dry cake mix and butter with electric mixer on low speed until crumbly; reserve 1 cup.</p>
<p>In bottom of ungreased 13&#215;9-inch pan, press remaining crumbly mixture.</p>
<p>In same bowl, beat cream cheese and frosting with electric mixer on medium speed until smooth. Beat in eggs until blended. Pour over crust; sprinkle with reserved crumbly mixture.</p>
<p>Bake about 45 minutes (about 42 minutes for dark or nonstick pan) or until set; cool completely. Cover and refrigerate at least 2 hours until chilled. For bars, cut into 6 rows by 6 rows. Store covered in refrigerator.</p>

<p>The rash of spring storms has been unfortunate and we hope you and your loved ones are safe and well. Many places in the area are accepting donations for the relief effort. Our heart goes out to all those affected.</p>
<p>The Eureka Springs Blues Festival is this weekend. If the blues are your thing, be sure to catch the multitude of performers that will be all over town. We have one cottage left for the weekend and it won&#8217;t last long. Cars shows, gallery strolls, free music in the park and more&#8230;Eureka has lots of things going on this month. Opera in the Ozarks starts later this month. The season is short, so don&#8217;t miss out. The finale will be on July 22.</p>
<p>We&#8217;ve been working on ongoing upgrades this spring, with new drapes and duvets in several rooms, new flat-screen tv&#8217;s and cherry tv stands. We&#8217;re always working to make your stay nice and comfortable and we appreciate all our wonderful guests.</p>

<p>The rain has been plentiful and all the plants and flowers are so green and lush. It&#8217;s been a beautiful spring and should make for marvelous fall color later this year. Don&#8217;t believe the bad news reports. Eureka Springs isn&#8217;t flooded and is open and ready for business. The natural springs are beautiful and flowing right now. If you are a photography enthusiast, now is a great time to take advantage of this rare opportunity to capture some spectacular shots.</p>
<p>The May Festival of the Arts is held the entire month. Come celebrate the art of Eureka Springs in all its forms. Dozens of exhibits, artist’s receptions and demonstrations, Gallery Strolls, annual White Street Studio Walk, free concerts and much more are part of this month&#8217;s city-wide festival. This year&#8217;s premier performance of the Great Passion Play will commence on May 6th. Among the many other events are a plant sale, car shows, a parade, War Eagle Craft Show, a bike show and much more!</p>
<p>I want to thank everyone that has voted on our food poll. It seems that there is a growing demand for healthier foods while people are on vacation. We intend to take your input to heart and adjust our recipes accordingly, so stay tuned as we gradually work on perfecting them. <p>RECIPE</p>
<p>LEMON MUFFINS<br />
1 3/4    cups all-purpose flour<br />
1    teaspoon baking powder<br />
3/4    teaspoon baking soda<br />
1/4    teaspoon salt<br />
3/4    cup sugar<br />
1    tablespoon grated lemon rind<br />
1    large egg, beaten<br />
1    (8 oz) container lemon yogurt<br />
6    tablespoons butter, melted<br />
1    tablespoon fresh lemon juice<br />
glaze</p>
<p>Combine first 6 ingredients in a large bowl; make a well in center of mixture.<br />
Stir together egg and next 3 ingredients until blended. Add to dry ingredients, stirring just until moistened. Spoon into lightly greased muffin pans, filling three-fourths full.<br />
Bake at 400 degrees for 10 to 12 minutes or until lightly browned. Cool in pans 5 minutes. Prepare glaze.<br />
Spoon warm glaze evenly over warm muffins. Remove from pans and cool completely on wire racks.<br />
Makes 12 muffins.</p>
<p>GLAZE<br />
1/4    cup sugar<br />
2    teaspoons grated lemon rind<br />
1/3    cup fresh lemon juice</p>
<p>Cool all ingredients in a small saucepan over medium heat, stirring constantly, just until sugar dissolves.</p>

			<content:encoded><![CDATA[<p>Blooms, blooms everywhere! I don&#8217;t have to tell you the weather is just great to get out and enjoy, especially after such a hard winter. Our special this month is a great getaway on a budget and you can even add a couple&#8217;s massage by exchanging the show tickets along with $79 extra! What a great deal as couple&#8217;s massages normally are $130 for one-hour for two people.</p>
<p>Events this month include the 2nd Saturday Gallery Stroll. Enjoy an open-house atmosphere as galleries welcome tourists and locals alike. Carving In The Ozarks is also this month and offers an unique opportunity to see carvers at work using chainsaws to make art instead of cutting down trees. Of course, music shows, stores and restaurants have all reopened after their winter break, so there&#8217;s plenty to do and enjoy in Eureka Springs.</p>
<p>We want your input on a poll we are conducting about food choices. While we get many compliments on our made-from-scratch breakfasts and desserts, we want to stay current with our guests preferences. It&#8217;s a delicate balance. While we rarely do a &#8220;country breakfast&#8221; with biscuits, gravy and scrambled eggs since you can get that at almost any restaurant, we also don&#8217;t want to serve fancy dishes that our guests can&#8217;t pronounce with ingredients that are only available at gourmet stores.<br />

EVENING SHADE INN TRIPLE CHOCOLATE CAKE</p>
<p>Make two 9 inch layers of Devil’s Food Cake by box directions.<br />
Place layer of Chocolate Ganache between the layers.<br />
Frost Cake with Extra Smooth Frosting.<br />
Top with toasted almond pieces.</p>
<p>Ganache<br />
1/2 pound bittersweet chocolate (hershey’s special dark chips)<br />
1/2 cup heavy cream<br />
Chop chocolate or use chocolate chips and place in a 2-quart bowl.<br />
Place cream in a micro-wave safe measuring cup and bring to a boil (about 1 minute). Pause and bring to a boil twice more (should take only a few seconds the second and third time). Wait 20 seconds, then pour the cream over the chocolate. Use a spoon to blend the chocolate until it is soft. Whisk starting in the center of the bowl and gradually work out. Stop as soon as mixture is blended. Ganache can keep in the refrigerator for up to two weeks.<br />
Makes enough to frost between two 9? cake layers.</p>
<p>Extra Smooth Frosting<br />
10 ounces bittersweet chocolate (60% cacao works best), chopped<br />
1 1/2 cups unsalted buter, room temperature<br />
3 cups powdered sugar<br />
1 tablespoon vanilla extract<br />
Place chopped chocolate in a medium metal bowl, set bowl over saucepan of simmering water and stir until choclate is melted and smooth. Carefully remove bowl from over water, let melted chocolate cool until lukewarm, stirring occasionally. Using electric mixer, beat butter in large bowl until smooth and creamy. Sift powdered sugar over buter and beat until well blended, about 2 minutes. Beat in vanilla. Add melted chocolate and beat until well blended and smooth, occasionally scraping down sides of bowl.</p>

We planted roses yesterday&#8230;spring is on it&#8217;s way. Things are starting to get busy and everyone is sprucing up after the cold, hard winter. It&#8217;s good to see things greening up again already. Our Valentine&#8217;s month special was a big hit and we want to thank all of the Romantic Couples who took advantage of it. We also had lots of fun making the cherry cheesecake special dessert this year. Now that February is behind us, there&#8217;ll be more and different wonderful desserts to enjoy.</span></p>
<p>Wow! March starts off with Mardi Gras celebrations all over town. <a href="http://www.eveningshade.com/wp-content/uploads/Mardi_Gras_Mask.jpg"><img class="alignright size-medium wp-image-827" title="Mardi_Gras_Mask" src="http://www.eveningshade.com/wp-content/uploads/Mardi_Gras_Mask-291x300.jpg" alt="Eureka Springs Mardis Gras" width="291" height="300" /></a>The parade is downtown this Saturday. If one parade isn&#8217;t enough this month, the St. Patricks&#8217; Day Parade and the Victorian Classic 10K will be on March 12. You can sample soups and desserts from restaurants and B&amp;B&#8217;s at the Souper Soup that follows the Victorian Classic at the Inn of the Ozarks Convention Center. The Spring Antique show will be March 18th, also at the Convention Center. <span style="color: #000000;">Don&#8217;t miss these annual events that draw bigger crowds to Eureka Springs each year.</span><span style="color: #000000;"> Music Shows reopen this month, with he Pine Mountain Jamboree opening Friday night, just in time for our &#8220;Sing Into Spring Special&#8221;.</span><span style="color: #000000;"><br />

<p>BREAKFAST CROISSANT CASSEROLE</p>
<p>(Makes 4 Casseroles)<br />
4 eggs<br />
1 ¼ cups milk<br />
7 oz shredded cheese (colby/cheddar)<br />
3 oz pepperjack cheese<br />
3/8 tsp dill seed<br />
3/8 tsp dill weed<br />
3 oz cream cheese, diced<br />
3/8 tsp ground mustard<br />
1 ¼ tsp Greek seasoning<br />
3/8 onion, diced and sautéed<br />
4 small croissants (or 1 ½ large)<br />
4 slices ham (3&#215;5 sandwich size)<br />
Hollandaise sauce mix</p>
<p>Grease 8 oz ramekins<br />
Cover bottom of ramekins with a layer of torn croissants<br />
Place layer of diced cream cheese over croissants<br />
Cut ham into small pieces (about 3/8”) and layer over cream cheese<br />
Cover with another layer of torn croissants<br />
Mix eggs, milk, colby/cheddar cheeses, mustard, seasoning and onion together<br />
Pour over croissants, avoid overfilling cups<br />
Top with pepperjack cheese<br />
Bake at 350° for 1 hour<br />
Mix Hollandaise sauce following package directions<br />
Turn out casserole from ramekins onto small plate and top with Hollandaise sauce.</p>

<p>We had a great New Year&#8217;s weekend and we&#8217;re looking forward to an even better 2011, thanks to all our wonderful repeat guests. Thank you!<br />
Although January is normally a quiet month here in Eureka Springs, we have lots to do this month. Decorations have to be put away, rooms need to be refreshened, year-end office work and planning for the year ahead all have to be done.  </p>
<p>We&#8217;re trying something new this winter. Donna has decided to serve dinner to the cottages in January because the selection of restaurants is limited.<br />
Our recipe for this month is a dessert that would the perfect for Valentine&#8217;s day. We made this a few days ago as a trial-run and it was fantastic.</p>

<p>RECIPE</p>
<p>CHOCOLATE CHERRY CHEESECAKE</p>
<p>Crust:<br />
2    cups chocolate wafer crumbs<br />
6    tablespoons melted butter</p>
<p>Cheesecake:<br />
4    8 oz packages cream cheese<br />
1    cup sugar<br />
4    eggs<br />
4    ounces white baking chocolate, melted<br />
2    teaspoons vanilla extract<br />
1    jar (10 oz) maraschino cherries, quartered<br />
1/2    cup chopped pecans</p>
<p>Topping:<br />
3    ounces semisweet chocolate, chopped<br />
2    tablespoons butter<br />
1 1/2     teaspoons shortening &#8211; divided<br />
1/2    ounce white baking chocolate</p>
<p>In a small bowl, combine chocolate crumbs and butter. Press onto the bottom and 1 inch up the sides of a greased 10-inch springform pan. Bake at 350 degrees for 8 minutes. Cool on a wire rack.</p>
<p>In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in melted chocolate and vanilla. Gently fold in cherries and pecans. Pour into crust.</p>
<p>Bake at 350 degrees for 50-55 minutes or until the center is almost set. Cool on a wire rack for 10 minutes.<br />
Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer. Refrigerate overnight.</p>
<p>In a microwave, melt the semisweet chocolate, butter and 1 teaspoon shortening; stir until smooth. Cool for 2 minutes; pour over cheesecake. Spread over the top and let it run  down the sides. Cool.</p>
<p>In a small saucepan, melt the white chocolate and remaining shortening. Drizzle over the top. Cool. Store in the refrigerator.</p>

<p>RECIPE</p>
<p>SAUSAGE HASHBROWN CASSEROLE</p>
<p>1    lb ground sausage, divided<br />
2    cups shredded cheddar cheese<br />
1    can (10 3/4 oz) cream of chicken soup<br />
1    cup sour cream<br />
1    container (8 oz) container of french onion dip<br />
1    cup chopped onion (optional)<br />
1/4    cup each red and green bell pepper, chopped (optional)<br />
salt and pepper to taste<br />
1    package (30 oz) frozen hash brown shredded potatoes, thawed</p>
<p>In a skillet, cook the sausage until browned. Drain well. In a large mixing bowl, combine the cheese, chicken soup, sour cream, french onion dip, chopped onion, bell peppers, salt and pepper. Fold in thawed hash brown potatoes. Reserve about 1/2 cup cooked sausage and combine remainder with hash brown mixture. Spread mixture in a 9&#215;13 greased baking dish. Top with remaining sausage. Bake at 350 degrees for about one hour or until casserole is golden brown. Cool about 10 minutes before serving.</p>

<p>Finally, Spring is on the way! At least the weather is warmer and things coming alive again. The Pine Mountain Jamboree Music show opens this weekend and the Ozark opens March 12th. Eureka Springs will host The Governor&#8217;s Conference on Tourism starting Sunday. This conference is the largest in-state meeting of travel, tourism, and hospitality professionals. We welcome Governor Beebe to Eureka Springs and hope he gets to see all Eureka Springs&#8217; has to offer!<span id="more-550"></span></p>

<p>HAZELNUT TOFFEE SQUARES</p>
<p>RECIPE INGREDIENTS<br />
8 ounces unsalted butter, at room temperature<br />
1 cup firmly packed dark brown sugar<br />
1 large egg yolk<br />
1 teaspoon vanilla extract<br />
1/4 teaspoon salt<br />
2 cups all-purpose flour<br />
10 ounces bittersweet chocolate, chopped<br />
1/4 cup milk<br />
1 cup chopped hazelnuts, toasted</p>
<p>DIRECTIONS<br />
Heat the oven to 350 degrees F. Lightly grease a 13&#215;9-inch baking pan.</p>
<p>With a wooden spoon or a mixer, cream the butter and brown sugar until smooth and no lumps remain. Add the egg yolk, vanilla, and salt; beat until well blended. Add the flour; mix until dough begins to come together (if you’re using an electric mixer, set it on low speed). Pat the dough into the pan. Bake until dough begins to pull away from the sides of the pan and keeps a slight indentation when pressed lightly, 26 to 28 minutes.</p>
<p>Meanwhile, melt the chocolate and the milk in a double boiler, stirring as little as possible to prevent separating. Pour the warm ganache over the warm baked cookie crust and spread it evenly. Sprinkle with the nuts and let cool completely until chocolate has set, about 4 hours.</p>
<p>Cut into 1 1/2-inch squares.</p>
