<p>RECIPE</p>
<p>SAUSAGE HASHBROWN CASSEROLE</p>
<p>1    lb ground sausage, divided<br />
2    cups shredded cheddar cheese<br />
1    can (10 3/4 oz) cream of chicken soup<br />
1    cup sour cream<br />
1    container (8 oz) container of french onion dip<br />
1    cup chopped onion (optional)<br />
1/4    cup each red and green bell pepper, chopped (optional)<br />
salt and pepper to taste<br />
1    package (30 oz) frozen hash brown shredded potatoes, thawed</p>
<p>In a skillet, cook the sausage until browned. Drain well. In a large mixing bowl, combine the cheese, chicken soup, sour cream, french onion dip, chopped onion, bell peppers, salt and pepper. Fold in thawed hash brown potatoes. Reserve about 1/2 cup cooked sausage and combine remainder with hash brown mixture. Spread mixture in a 9&#215;13 greased baking dish. Top with remaining sausage. Bake at 350 degrees for about one hour or until casserole is golden brown. Cool about 10 minutes before serving.</p>

<p>Finally, Spring is on the way! At least the weather is warmer and things coming alive again. The Pine Mountain Jamboree Music show opens this weekend and the Ozark Mountain Hoe-Down opens March 12th. Eureka Springs will host The Governor&#8217;s Conference on Tourism starting Sunday. This conference is the largest in-state meeting of travel, tourism, and hospitality professionals. We welcome Governor Beebe to Eureka Springs and hope he gets to see all Eureka Springs&#8217; has to offer!<span id="more-550"></span></p>
<p>We have some vacancies for the last two weekends of March, but weekdays are easier to get the suite or cottage you want. We are open year-around so it&#8217;s not too early to call to reserve your dates.Plan that Special Getaway this year at Evening Shade Inn Bed and Breakfast.</p>

<p>HAZELNUT TOFFEE SQUARES</p>
<p>RECIPE INGREDIENTS<br />
8 ounces unsalted butter, at room temperature<br />
1 cup firmly packed dark brown sugar<br />
1 large egg yolk<br />
1 teaspoon vanilla extract<br />
1/4 teaspoon salt<br />
2 cups all-purpose flour<br />
10 ounces bittersweet chocolate, chopped<br />
1/4 cup milk<br />
1 cup chopped hazelnuts, toasted</p>
<p>DIRECTIONS<br />
Heat the oven to 350 degrees F. Lightly grease a 13&#215;9-inch baking pan.</p>
<p>With a wooden spoon or a mixer, cream the butter and brown sugar until smooth and no lumps remain. Add the egg yolk, vanilla, and salt; beat until well blended. Add the flour; mix until dough begins to come together (if you’re using an electric mixer, set it on low speed). Pat the dough into the pan. Bake until dough begins to pull away from the sides of the pan and keeps a slight indentation when pressed lightly, 26 to 28 minutes.</p>
<p>Meanwhile, melt the chocolate and the milk in a double boiler, stirring as little as possible to prevent separating. Pour the warm ganache over the warm baked cookie crust and spread it evenly. Sprinkle with the nuts and let cool completely until chocolate has set, about 4 hours.</p>
<p>Cut into 1 1/2-inch squares.</p>

<p>CREAM CHEESE FUDGE</p>
<p>1          package (8 oz) cream cheese, softened<br />
6        cups powdered sugar<br />
1 1/2 teaspoon vanilla<br />
1          package (12 oz) white chocolate chips<br />
3/4    cup chopped pecans<br />
1        oz (1 square) semisweet baking chocolate<br />
2          teaspoon shortening</p>
<p>In a large mixing bowl, beat cream cheese, sugar and vanilla until smooth. Melt white chocolate chips in microwave on Low until smooth, stirring occasionally. Fold melted white chocolate and chopped pecans into cream cheese mixture. Spread into a greased 8-inch baking dish. Chill until ready to frost. Melt baking chocolate with shortening in microwave on Low (about 2 minutes). Pour over top of fudge. Cool, then cut into squares.</p>
