EVENING SHADE INN BED AND BREAKFAST NEWSLETTER

Eureka Springs, Arkansas
October , 2007

The weather has cooled off and fall is here! I'm looking forward to not mowing the grass every week. It won't be long until we'll start needing our fireplaces. Most people visit this time of year because of the cooler temperatures and the beautiful leaves, but there is still plenty else to do. Festivals, Craft Fairs, Studio Tours, Fall Colors, Antique Show and Sale, and even Ballet are just some of the events going on. Eureka Springs is also on the Arkansas Trail of Lights for Christmas and decorations will be up after Thanksgiving. The Christmas Parade will be November 30th- make your reservations now!

1 can cream of chicken or celery soup
½ cup sour cream
½ cup butter or margarine, melted
1 teaspoon salt
½ teaspoon pepper
2 cups grated cheddar cheese
½ cup finely chopped onion
1 cup crushed corn flakes

Heat oven to 350°. Coat 9x13 baking pan with nonstick cooking spray. In a large bowl, combine all ingredients except corn flakes. Pour into baking pan. Sprinkle top with corn flakes. Bake uncovered for about 45 minutes. Let set a few minutes before serving, so it will thicken.
