RECIPES

STRAWBERRY MUFFINS
1 (10-ounce) package frozen sliced strawberries, thawed and undrained
2 cups all-purpose flour
2/3 cup sugar
1 ½ tablespoons baking powder
3/4 teaspoon salt
2/3 cup milk
2 large eggs
1/3 cup vegetable oil
Strawberry Butter

Reserve 2 tablespoons strawberries for Strawberry Butter. Stir together flour and next 3 ingredients in a large bowl; make a well in center of mixture. Stir together remaining strawberries, milk, eggs, and oil until blended. Add to dry ingredients, stirring just until dry ingredients are moistened. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 375º for 20 minutes. Remove from pans immediately, and serve with Strawberry Butter. Yield: 14 muffins.

STRAWBERRY BUTTER
1/2 cup butter, softened
2 tablespoons reserved strawberries

Stir together butter and strawberries until well blended. Yield: ½ cup.

War Eagle Craft Fair
May 4, 5, 6, 2007 The Ozarks #1 Arts and Crafts Fair.  A major reason is to have a chance to buy from the year's work of a favorite Ozark artist or craftsman. Others come early to insure a full day's shopping among the more than 300 exhibitors. Gates open at 8 a.m. each day and close at 5:00 p.m. on Thursday, Friday and Saturday and at 4:00 p.m. on Sunday.

May Festival of the Arts
May, 2007 Events and activities every day, every week during the month of May celebrating arts in all its forms. The theme for the 2007 Festival is "Garden Party." This theme will be used for ARTragious Parage entries and Yard Art entries as well as other events to be announced.  Gallery walks, concerts, dances, artist receptions, parade, contests, workshops and demonstrations. Eureka Springs Off Road Triathlon Saturday, June 9th, 2007 More than 150 athletes are expected to challenge each other and Mother Nature in Eureka Springs at the second annual XTERRA Eureka Springs  Off-Road Triathlon and Trail Run on Saturday June 9th, 2007. The main event combines a 0.5-mile swim in Lake Leatherwood, with a 13-mile mountain bike through the park s mountainous terrain and a 5-mile trail run. Participants may race as individuals or as a part of a relay team. A new addition to this year s event is a separate Trail Running race that will precede the main event. It features a 3.5-mile run on the Miner s Rock Trail, also in Lake Leatherwood City Park. There are still slots available for both races.
