Eureka Springs Bed and Breakfast Newsletter
EVENING SHADE INN BED AND BREAKFAST NEWSLETTER
Eureka Springs, Arkansas
March , 2008
Spring is coming and not a bit too soon. Donna and I just returned from
a much needed getaway to recharge ourselves for the busy season ahead.
We took a 11-day motorcycle ride through Oklahoma, Texas and Louisiana
to visit old friends and relatives. We managed to rack up over 1850
miles and lots of memories. We encountered all types of weather and
rode in temperatures ranging from 29 to 72 degrees F. There was a snowfall
here in Eureka the night before we left so we looked forward to escaping
to warmer weather in the south.
We've been getting lots of calls and emails for March and April and
our weekends are filling up. Please don't wait too late to call, especially
if you want a specific suite or cottage. As you can tell by the list
of events, there are lots of things going on in Eureka during March
and April. The Music Shows reopen March 7th and restaurants will open.
Remember that we will give you a gift certificate if you need to cancel
that you can use anytime in the upcoming year so there's no reason not
to book now.
If you are thinking of attending the Passion Play this year, here's
a special Passion Play offer. If you make your reservation before
April 30th and attend the Play anytime during May, June or July, the
tickets are HALF PRICE! Just let us know when you would like to attend
and we'll be glad to make the reservations for you.

RECIPE
RASPBERRY NUT DREAMS
1/2 cup salted roasted macadamia nuts
1/3 cup packed brown sugar
2 packages (3 oz ea) cream cheese, softened
1 cup frozen raspberries thawed and liquid reserved
1 can (16.3 oz) Pillsbury Grands Flaky Layers refrigerated buttermilk
biscuits
1/3 cup flaked coconut
Heat oven to 350°F. Lightly spray 16 regular size muffin cups with
cooking spray. In food processor, process macadamia nuts with on-and-off
motions until coarsely chopped. Add brown sugar; process until combined.
In same food processor, process cream cheese, 2 tablespoons nut mixture
and 1 to 2 tablespoons reserved raspberry liquid until smooth.
Separate dough into 8 biscuits; separate each into 2 layers, making
a total of 16 rounds. Lightly press each round into bottom and up sides
of muffin cup. Spoon about ½ tablespoon cream cheese mixture
into each dough-lined cup. Top each evenly with raspberries, 1 tablespoon
remaining nut mixture and 1 teaspoon coconut.
Bake 14 to 22 minutes or until coconut is lightly browned. Cool in
pan 5 minutes before serving.
Almonds can be substituted for macadamia nuts.
