RECIPES
We thought Chili and Hot Crackers would be great on cold days like we've been having.
Hot Texas Red Chili
3 Lbs. Coarsely Ground Lean Beef
6 Tbs. Chili Powder
1 Tbs. Salt
1 Tbs. Sugar
10 Cloves Garlic, chopped or pressed
1 Tsp. Cumin
1 Tsp. Oregano
1 Tsp. Cayenne Red Pepper
3 Tbs. Paprika
1 14oz Can Stewed or Diced Tomatoes (pureed)
Add meat and sear over high heat in frying pan, stirring constantly until meat is gray in color (not brown). Add 1 quart of water and all other ingredients to a 4 quart covered pot. Cover and cook at bubbling simmer a minimum of 2 hours to blend flavors. Continue to simmer as long as time allows, up 5 hours. Finish cooking without lid, if necessary, to thicken to desired consistency.
Hot Oyster Crackers
1 ¼ Cup Canola Oil
2 1 oz Packages Of Hidden Valley Powdered Ranch Dressing
2 Tbls Crushed Red Pepper
1 Tsp Ground Cayenne Pepper
2 12oz Packages Oyster Crackers
1 1-Gallon Glass Jar With Lid
Combine oil, dressing, red and cayenne pepper in food processor and mix at high speed until well blended.
Place 1 package of crackers into the jar and pour about half of the mixture over them. Close lid on jar and shake until thoroughly covered. Pour remaining package of crackers and remaining mixture over them, closing lid and shaking thoroughly again. Occasionally shake jar over the next few hours. Let stand overnight before serving.
Makes approx 1 gallon of crackers. Great with chili.

Friday Feb 9th will be the a "Chocolate, Sparkles, and Pearls Night" at THE Auditorium. It is an Art Auction put on by Randy Woodward with musical entertainment provided by Pearl Brick.
Chocolate and Champagne will be served for a fun evening of entertainment. Tickets can be purchased in advance and at the door of $20.00.

11th Annual Antiques Show and Sale

A special wine and cheese preview showing will headline this year's Antique Show at the Best Western Inn of the Ozarks Convention Center on Friday March 16. A $10.00 admission will allow one to attend the special reception and shop from 5:30 until 7:00 pm as well as shop on Saturday and Sunday March 17 and 18.
43 dealers from 14 states are acticipating this popular spring show as well as antique lovers who come from an average of 20 states. This is our 11th Spring Show and we are more excited than ever because of the inquiries that are already coming in. Regular show hours will be from 10 am until 6 pm on Saturday and from 10 until 4 on Sunday. Admission is $2.50 and is good for both days. A cash drawing is held at the end of the show, plus a lodging voucher will be awarded to another lucky winner. 17th Annual Kite Festival

In Spring, a young man s fancy turns to thoughts of kite flying! For those who love the thrill of seeing the unique, the tiny, the great, the colorful and the unexpected take to the air against all odds, the 17th Annual Eureka Springs (AR) Kite Festival on March 24th, 2007 is a must-do day on the calendar.
The event will be held on the grounds of the Turpentine Creek Animal Refuge located on Arkansas Highway 23, 7 miles south of Eureka Springs. This is a perfect family affair where chairs, blankets, and home-made entertainment are encouraged. There will be food and drinks available on the premises.
The sky s the limit as past participants gather to share stories and show off new and/or champion kites along with those who simply love the feel of launching an honest, old-fashioned, hand-built kite.
