Hopefully the snow will be gone soon and Spring is just around the corner. We’re gearing up for February and want to make the entire month of February Romantic with month-long Specials. RECIPE

WHITE CHOCOLATE AMARETTO CAKE

Cake:
1 (18.25 ounce) package yellow cake mix
4 eggs
1 (3.3 ounce) package instant white
chocolate pudding mix
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup amaretto liqueur
1/4 teaspoon almond extract

Glaze:
1/2 cup butter
1/4 cup water
1 cup white sugar
1/2 cup amaretto liqueur

Icing:
1 (16 ounce) package vanilla frosting
1/4 cup blanched slivered almonds

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 10 inch non-stick Bundt pan.
2. In a large bowl, combine cake mix, eggs, pudding mix, 1/2 cup of cold water, oil, 1/2 cup amaretto and 1/4 teaspoon almond extract. Blend well for approximately 3 minutes.
3. Pour batter into prepared 10 inch Bundt pan. Bake at 350 degrees F (175 degrees C) for 45 minutes to an hour, or until a toothpick inserted into the center of the cake comes out clean.
4. Remove cake from oven, and use an ice pick or skewer to make as many holes as possible into the cake. Apply glaze while cake is still warm. Slowly and patiently drizzle glaze over cake, including the edges and center of Bundt pan. Allow cake to cool in the pan for at least 2 hours.
5. To make the glaze: Combine butter, sugar, 1/4 cup water, and 1/2 cup amaretto in a saucepan. Bring to a boil, and continue to boil for 10 minutes, stirring constantly.
6. Topping: Lightly toast slivered almonds in the oven. This will take 5 to 10 minutes. Stir frequently and be careful not to burn. Heat 1/4 cup of the prepared frosting in the microwave for 10 seconds, to soften. Place the cake on serving dish and use a spoon to drizzle the softened frosting over the cake. Scatter toasted almonds over cake before frosting cools.

We had a great New Year’s weekend and we’re looking forward to an even better 2011, thanks to all our wonderful repeat guests. Thank you!
Although January is normally a quiet month here in Eureka Springs, we have lots to do this month. Decorations have to be put away, rooms need to be refreshened, year-end office work and planning for the year ahead all have to be done.

We’re trying something new this winter. Donna has decided to serve dinner to the cottages in January because the selection of restaurants is limited.
Our recipe for this month is a dessert that would the perfect for Valentine’s day. We made this a few days ago as a trial-run and it was fantastic.

RECIPE

CHOCOLATE CHERRY CHEESECAKE

Crust:
2 cups chocolate wafer crumbs
6 tablespoons melted butter

Cheesecake:
4 8 oz packages cream cheese
1 cup sugar
4 eggs
4 ounces white baking chocolate, melted
2 teaspoons vanilla extract
1 jar (10 oz) maraschino cherries, quartered
1/2 cup chopped pecans

Topping:
3 ounces semisweet chocolate, chopped
2 tablespoons butter
1 1/2 teaspoons shortening – divided
1/2 ounce white baking chocolate

In a small bowl, combine chocolate crumbs and butter. Press onto the bottom and 1 inch up the sides of a greased 10-inch springform pan. Bake at 350 degrees for 8 minutes. Cool on a wire rack.

In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in melted chocolate and vanilla. Gently fold in cherries and pecans. Pour into crust.

Bake at 350 degrees for 50-55 minutes or until the center is almost set. Cool on a wire rack for 10 minutes.
Carefully run a knife around the edge of the pan to loosen; cool 1 hour longer. Refrigerate overnight.

In a microwave, melt the semisweet chocolate, butter and 1 teaspoon shortening; stir until smooth. Cool for 2 minutes; pour over cheesecake. Spread over the top and let it run down the sides. Cool.

In a small saucepan, melt the white chocolate and remaining shortening. Drizzle over the top. Cool. Store in the refrigerator.

Christmas time again! Wow, where did the year go? We’ve had our lights up for a couple of weeks now and the town looks really great. The Eureka Springs Christmas Parade will be tomorrow night and will be interesting and unusual, just like Eureka Springs, as always. We’ve decided to take off Dec 23-26 to be with family, so don’t wait to reserve for New Year’s weekend with us.

It’s November already and year-ending events are filling the Eureka Springs calendar. The 63rd Annual Folk Festival is this weekend and features free concerts and a craft show in the park. Eliza Gilkyson headlines the featured show at the Auditorium Nov. 6. The Barefoot Ball returns to the 1905 Basin Park Hotel by popular demand Nov. 5. And a talent show competition will be inaugurated Nov. 4 as part of a free show at the Auditorium.

We’re looking forward to the crisp nights and warm days that will make the leaves turn. We still don’t know what effect the hot, dry summer will have on the foliage, but luckily we did get some rain late in the summer and everything greened up again. Normally, the leaves are at their peak during the last week of October and first week of November, but nothing’s guaranteed. You can check the Arkansas Tourism Foliage Update here.

Whew! May is over and summer is here. Everything is so green and lush right now because of all the spring rain. Donna and I have found a little time to get out enjoy the scenery lately on the bike. The riding here is fantastic. June looks to be a busy month in Eureka Springs with lots of things to do.
