Oreo Cookie Dessert Recipe
* 1 (18 ounce) package Oreo cookies, divided, crushed (save 3/4 cup)
* 1/2-1 cup butter or margarine, melted
* 16 ounces Cool Whip, divided
* 8 ounces cream cheese
* 1/4 cup powdered sugar
* 1 (3 1/2 ounce) box instant chocolate pudding mix
* 2 cups milk (3.4 ounce)
* 1 (14 ounce) can eagle brand sweetened condensed milk

1. Pour crushed cookies in 9×13 glass dish.
2. Melt butter, pour over cookies.
3. Mix 1/2 of the cool whip, cream cheese and powdered sugar, spread on top.
4. Mix pudding with milk and sweetened condensed milk; beat until thick, spread on top.
5. Spread on other 8 oz Cool Whip.
6. Sprinkle with leftover cookies.
7. Refrigerate over night.

Whew! May is over and summer is here. Everything is so green and lush right now because of all the spring rain. Donna and I have found a little time to get out enjoy the scenery lately on the bike. The riding here is fantastic. June looks to be a busy month in Eureka Springs with lots of things to do. Here’s just some of the things going on in June – a art gallery stroll, a car show, Opera in the Ozarks, the Xterra Outdoor Triathlon, Carnegie Library 100th Celebration and much more. And don’t forget,Blues Weekend is this coming weekend and there will be lots of music all over town to enjoy.

PRALINE PECAN CHEESECAKE

Crust:
1 pkg. Pillsbury Plus butter recipe cake mix
1/2 c. softened butter
(Reserve 1 cup of crust mixture for topping)

Filling:
3 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 to 1 1/2 tsp. rum extract
4 (1.2 oz.) toffee candy bars, coarsely crushed
3 tbsp. flour
3 eggs

Topping:
1 c. reserved crust mixture
1/2 c. packed brown sugar
1 c. chopped pecans

Garnish:
1/3 c. caramel ice cream topping

Heat oven to 325 degrees. Combine cake mix and butter in large bowl, mixing at low speed until crumbly. Set aside 1 cup of mixture for topping. Press remaining mixture in bottom and 1 1/2 inches up sides of ungreased 9 or 10 inch springform pan.

In same bowl, combine cream cheese, sugar, flour, and rum extract; beat until smooth. Add eggs and mix well. Stir in crushed candy bars and pour into crust lined pan. In small bowl combine reserved crumb mixture, brown sugar, and pecans; blend well. Sprinkle evenly over filling.

Bake at 325 degrees for 70-85 minutes or until center is set and topping is golden brown. Remove from oven and drizzle caramel topping over top. Bake for 8-10 minutes more to set topping. Cool 30 minutes.

Run knife around sides of pan to loosen. Cool completely. Remove sides of pan and refrigerate 4-5 hours or overnight. Store in refrigerator. 16 serving.

RECIPE
Orange-Kissed Breakfast Bread Pudding
Ingredients
2 cans (13.9 oz each) Pillsbury® refrigerated orange flavor sweet rolls with icing (16 rolls)
2 cups half-and-half
2 whole eggs
2 egg yolks
1/2 cup sugar
3/4 cup Walnut Halves and Pieces, coarsely chopped
1/4 cup half-and-half
1/4 cup Butter
1 teaspoon vanilla

Directions
1. Heat oven to 400°F. Spray large cookie sheet with No-Stick Cooking Spray. On cookie sheet,
place rolls 1 inch apart. Reserve icing. Bake 8 to 10 minutes or until golden brown. Remove from cookie sheet to
cooling rack. Cool completely, about 10 minutes.
2. Reduce oven temperature to 350°F. Spray 8-inch square pan with cooking spray. Using serrated knife, cut
rolls into 1/2- to 1-inch pieces; set aside.
3. In large bowl, mix 2 cups half-and-half, whole eggs, egg yolks, sugar and walnuts until well blended. Gently
stir in roll pieces. Spread in pan.
4. Bake at 350°F 50 to 55 minutes or until toothpick inserted in center comes clean and top is deep golden
brown. Cool 30 minutes.
5. Meanwhile, in 1-quart saucepan, heat icing (from both containers), 1/4 cup half-and-half and butter over low
heat, stirring occasionally, until butter is melted. Stir in vanilla.
6. Cut warm bread pudding into 9 servings. Drizzle with sauce.

The galleries will start their Annual Gallery Stroll Open House the second Saturday of April and continue through December. A new event this year, the Grand Illumination, will decorate downtown buildings and Victorian homes with thousands of oriental lanterns. RECIPE
White Chocolate Lemon Tart
This recipe uses Meyer Lemons. Meyer lemons are a cross between a lemon and a mandarin orange. This unique fruit blends the traditional flavor of a lemon and the sweetness of an orange. It’s rich, dark and aromatic juice is much sweeter than a conventional lemon. If Meyer lemons aren’t available, mix lemon and fresh squeezed orange juice in equal parts.

3 large eggs
1/2 cup sugar
1/3 cup Meyer lemon juice (about 3 lemons)
4 ounces white chocolate chips
1 cup heavy cream
1 9 inch baked pie shell

In a medium stainless steel bowl, beat the eggs until blended. Stir in sugar and then Meyer lemon juice. Cook over boiling water, stirring continuously with a wire whisk until mixture thickens, resembling pudding. Remove from heat and stir in white chocolate until melted and completely incorporated. Set aside to cool at room temperature. Cover and chill.
Whip the cream to firm peaks. Fold the Meyer lemon mixture into the cream and spoon into baked pie shell.
Chill 2 hours or until firm before serving. If desired, garnish with extra whipped cream before serving.

Eureka Springs will host The Governor’s Conference on Tourism starting Sunday. This conference is the largest in-state meeting of travel, tourism, and hospitality professionals. HAZELNUT TOFFEE SQUARES

RECIPE INGREDIENTS
8 ounces unsalted butter, at room temperature
1 cup firmly packed dark brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
10 ounces bittersweet chocolate, chopped
1/4 cup milk
1 cup chopped hazelnuts, toasted

DIRECTIONS
Heat the oven to 350 degrees F. Lightly grease a 13×9-inch baking pan.

With a wooden spoon or a mixer, cream the butter and brown sugar until smooth and no lumps remain. Add the egg yolk, vanilla, and salt; beat until well blended. Add the flour; mix until dough begins to come together (if you’re using an electric mixer, set it on low speed). Pat the dough into the pan. Bake until dough begins to pull away from the sides of the pan and keeps a slight indentation when pressed lightly, 26 to 28 minutes.

Meanwhile, melt the chocolate and the milk in a double boiler, stirring as little as possible to prevent separating. Pour the warm ganache over the warm baked cookie crust and spread it evenly. Sprinkle with the nuts and let cool completely until chocolate has set, about 4 hours.

Cut into 1 1/2-inch squares.

RECIPE

Cream Cheese Fudge

CREAM CHEESE FUDGE

1 package (8 oz) cream cheese, softened
6 cups powdered sugar
1 1/2 teaspoon vanilla
1 package (12 oz) white chocolate chips
3/4 cup chopped pecans
1 oz (1 square) semisweet baking chocolate
2 teaspoon shortening

In a large mixing bowl, beat cream cheese, sugar and vanilla until smooth. Melt white chocolate chips in microwave on Low until smooth, stirring occasionally. Fold melted white chocolate and chopped pecans into cream cheese mixture. Spread into a greased 8-inch baking dish. Chill until ready to frost. Melt baking chocolate with shortening in microwave on Low (about 2 minutes). Pour over top of fudge. Cool, then cut into squares.
