Every Valentine’s Day, we make a special dessert for guests at our Eureka Springs bed and breakfast to enjoy. Celebrate romance and love and make someone feel special.
This year, we’ve created what we call a Red Velvet Cheesecake. Come enjoy it with your special someone.
RED VELVET CHEESE CAKE
1 box red velvet cake mix
3 (8 oz.) pkg. cream cheese, softened
1/3 cups sugar
1 1/2 tsp. rum extract
3 tablespoons flour
Make red velvet cake by box directions in two round 9″ cake pans. Bake by directions, remove from oven and set aside to cool in pan while making cheesecake.
Combine cream cheese, sugar, flour, and rum extract; beat until smooth. Add eggs and mix well. Pour into 9″ springform pan lined with parchment paper. Bake at 325 degrees for 70-85 minutes or until center is set. Remove from oven, cool completely. Refrigerate overnight.
1/2 cup butter, softened
1 pkg. (8 oz) cream cheese, softened
1 box (16 0z) powdered sugar
Cream butter and cream cheese. Add powdered sugar and beat until creamy.
Assemble cake by placing cream cheese icing between layers with red velvet cake on bottom, cheesecake layer second and red velvet layer on top. Cover outside of cake completely with icing. Drizzle cake with hot fudge and refrigerate 2 hours before serving.
Makes 16 servings.
