This year for St. Patrick’s Day, we made a special dessert for our Eureka Springs Bed and Breakfast guests. It’s a Lime Cake. It was a big hit and our guests loved it.

Here’s the recipe:
LIME CAKE
1 box Duncan Hines Lemon Supreme Cake Mix
2 small 3 oz boxes or 1 large box Lime Jello
5 eggs
1 cup oil
1 cup orange juice
Bake at 350 degrees 20-25 minutes in 3 round 9-inch pans. Cool well before frosting.
Frosting
1/2 cup butter, softened
8 ounces cream cheese, softened
3 tablespoons lime juice
2 pounds powdered sugar
Mix until spreading consistency and frost cake.
(I substituted Duncan Hines Key Lime frosting creations flavor mix instead of lime juice and used only one pound of powdered sugar.)
