Wow! The weather has been great the last few days with lows at night in the 50′s and highs in the 70′s. RECIPE

RICH CHEESECAKE BARS

1 package (9 ounces) yellow cake mix
3 tablespoons butter, softened
1 egg

Topping:
1 package (3 ounces) cream cheese, softened
2 cups confectioners sugar
1 egg

In a large bowl, combine the cake mix, butter and egg until well blended. Spread into a greased 9-inch square baking pan.

In a small bowl, beat the cream cheese, confectioners sugar and egg until smooth; spread evenly over batter.

Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Store in the refrigerator.

(we made this in a 9×13 and it worked, but it was a little thin.)
