Eureka Springs Blues FestivalEverything is so green and lush from the wonderful rain we’ve been getting. The weather hasn’t gotten too hot yet and it’s a wonderful time to visit Eureka Springs. We had some fantastic car shows last month. If you are a car nut, you should plan to attend next year. We love to have antique and classic car owners stay with us.

June 12th through 15th is the Annual Blues Weekend and is always fun. Various venues around town host the one-of-a-kind event that attracts local, regional and national and even international performers. Opera in the Ozarks returns June 20th for it’s 64th season. The performances at Inspiration Point have gained much notoriety and opera lovers agree it is a unique experience. If you enjoy Gospel Music, the Great Passion Play will host a Gospel Music Celebration June 21 and 22. Come out and support the Great Passion Play as this first-time event to help spread God’s word.

RECIPE

Mixed Berry Muffins

Start your day with these sweet, berry-filled muffins that are delicious on their own or spread with a touch of butter or jam.

RECIPE INGREDIENTS
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1 large egg
1 cup milk
4 tablespoons butter, melted
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 1/2 cups mixed berries

DIRECTIONS
Preheat the oven to 400 degrees F. Grease a muffin tin.

In a large bowl, combine the flour, baking powder, baking soda and salt. In a medium bowl, whisk together the sugar and egg. Whisk in the milk, melted butter, vanilla and lemon juice. Form a well in the dry ingredients and gradually stir in the milk mixture. Fold in the berries.

Spoon the batter into the muffin tin and bake about 18 to 20 minutes, or until the muffins are golden and a toothpick inserted in the middle comes out clean. Remove from the oven and let cool 10 minutes before serving.
