Although the fire danger has prevented some of the fireworks displays this year, there will be a July 4 celebration in Downtown Eureka Springs at Basin Park, sponsored by the Eureka Springs Downtown Network. For the foodies, the annual Fleur Delicious weekend will excite your tastebuds. Local restaurants are presenting special french-themed dishes and wine pairings. Off-road bicyclists will compete in the annual Fat Tire Festival at Lake Leatherwood and various other locations.
We are giving away Free Carriage Rides to our guests in July when you stay Two Nights Monday through Thursday. Carriage Rides are Half Price with a Two Night stay on the weekends in July. 1 Caramel Cake Mix, baked according to directions in a 9×13 pan
1/3 cup hot fudge ice cream topping
1/3 cup eagle brand condensed milk
While cake is hot from the oven, poke holes in the cake at about 2″ intervals. Warm hot fudge and eagle brand in a glass measuring cup in the microwave, mixing every few seconds until it’s thin enough to pour. Pour mixutre over cake, allowing time between coatings to soak in. Set cake aside to cool.
Mix 3/4 cup granulated sugar with 1/2 cup boiling water. Stir until dissolved. Cool.
Add 1/3 cup meringue powder and beat until mixture peaks. Stir in 1 pound powdered sugar. Mix until completely blended.
Add 2 cups Crisco shortening and mix until you reach desired consistency.
Frost cake. Leftover frosting will keep in the refrigerator for 2 weeks.
Drizzle caramel ice cream topping over cake and serve.
