RECIPE

EGGS BENEDICT CASSEROLE

6 cups french bread, cubed
12 large eggs
1 1/2 cups milk
3 tablespoons fresh chives, chopped
1 teaspoon salt
2 teaspoons tabasco sauce, optional
12 ounces Canadian Bacon, chopped
1 9-ounce package hollandaise sauce

Preheat oven to 350 degrees. Place french bread cubes into buttered, 8-cup shallow casserole dish.

Beat eggs, milk, chives, salt and tabasco in a large bowl; stir in Canadian Bacon; pour over bread cubes. Let mixture stand 5 minutes.

Bake 40 minutes or until mixture is puffed and set.

Meanwhile, prepare hollandaise sauce as package directs. Keep warm until ready to use.

Cut casserole into squares and serve with hollandaise sauce spooned on top.

Makes 6-8 servings.

Eureka Springs Paranormal Weekend. The 1886 Crescent Hotel & Spa gives ghost hunters the opportunity to investigate “America’s most haunted hotel” –on their own–for three days and two nights. Attendees will investigate this mountaintop spa resort’s “most active” rooms including the “morgue,” to capture evidence of “guests who checked out but never left.”

January 11
9th Annual Kings Day Mardi Gras Kick Off at the Rowdy Beaver Restaurant and Tavern. Open to the General Public. King and Queen and members of the Royal Court consisting of Dukes and Duchesses are introduced. Free food and music for anyone masked or in costume. King Cakes served for dessert. 2014 theme “Eureka Circus”.
