<p>It seems like one day it was the hottest it&#8217;s been this Summer and the next day it is Fall! A cold front came thru about a week ago and boy did it make a difference. The weather is just right for all the outdoor events coming up. There will still be some warm days so I included an Icebox Cheesecake recipe to enjoy. There are so many things going on this month and next. Be sure to look over the events list below, you&#8217;re sure to find something that you&#8217;d enjoy. <p>RECIPE</p>
<p>LEMON ICEBOX CHEESECAKE</p>
<p>Let the dissolved gelatin mixture cool down for a few minutes or the gelatin will seize when combined with the filling.</p>
<p>CRUST<br />
10    lemon sandwich cookies, crushed (about 1 1/4 cups)<br />
2    tablespoons unsalted butter, melted<br />
1    teaspoon grated lemon zest</p>
<p>CURD<br />
1    large egg plus 1 egg yolk<br />
1/4    cup sugar<br />
    pinch of salt<br />
2    tablespoons lemon juice<br />
1    tablespoon unsalted butter<br />
1    tablespoon heavy (whipping) cream</p>
<p>FILLING<br />
1/4    cup lemon juice from 2 lemons<br />
1    envelope (2 3/4 teaspoons) unflavored gelatin<br />
1 1/2    pounds cream cheese, softened<br />
3/4    cup sugar<br />
    pinch of salt<br />
1 1/4     cups heavy (whipping) cream, room temperature</p>
<p>Make Crust<br />
Adjust oven rack to middle position and heat oven to 350 degrees. Process cookies in a food precoessor until finely ground. Add butter and zest and pulse until combined.Press mixture into bottom of a 9-inch springform pan. Bake until lightly browned and set, about 10 minutes. Cool completely on a wire rack, at least 30 minutes.</p>
<p>Make Curd<br />
While crust is cooling, whisk egg, egg yolk, sugar and salt together in a small saucepan. Add lemon juice and cook over medium-low heat, stirring constantly, until thick and puddlinglike, about 3 minutes. Remove from heat and stir in butter and cream. Press through fine-mesh strainer into small bowl and refrigerate until needed.</p>
<p>Soften Gelatin<br />
Combine lemon juice and gelatin in a small bowl and let stand until gelatin softens, about 5 minutes. Microwave until mixture is bubbling around the edges and gelatin dissolves, about 30 seconds. Set aside.</p>
<p>Make Filling<br />
With electric mixer on medium speed, beat cream cheese, sugar and salt until smooth and creamy, scraping down siges of bowl, about 2 minutes. Slowly add cream and beat until light and fluffy, about 2 minutes. Add gelatin mixture and 1/4 cup curd, increase speed to medium-high and beat until smooth and airy, about 3 minutes.</p>
<p>Chill Cheesecake<br />
Pour filling into cooled crust and smooth top. Pour thin lines of remaining curd on top of cake and lightly drag paring knife through the lines to create marbled appearance. Refrigerate until set, at least 6 hours. Remove sides of pan. Serve. (Cheesecake can be covered in plastic wrap and refrigerated for up to 3 days.)</p>

<p>RECIPE</p>
<p>SAUSAGE HASHBROWN CASSEROLE</p>
<p>1    lb ground sausage, divided<br />
2    cups shredded cheddar cheese<br />
1    can (10 3/4 oz) cream of chicken soup<br />
1    cup sour cream<br />
1    container (8 oz) container of french onion dip<br />
1    cup chopped onion (optional)<br />
1/4    cup each red and green bell pepper, chopped (optional)<br />
salt and pepper to taste<br />
1    package (30 oz) frozen hash brown shredded potatoes, thawed</p>
<p>In a skillet, cook the sausage until browned. Drain well. In a large mixing bowl, combine the cheese, chicken soup, sour cream, french onion dip, chopped onion, bell peppers, salt and pepper. Fold in thawed hash brown potatoes. Reserve about 1/2 cup cooked sausage and combine remainder with hash brown mixture. Spread mixture in a 9&#215;13 greased baking dish. Top with remaining sausage. Bake at 350 degrees for about one hour or until casserole is golden brown. Cool about 10 minutes before serving.</p>

			<content:encoded><![CDATA[<p>This weekend, Saturday July 17 ends this year&#8217;s season of Opera In The Ozarks. A Gala Anniversary Concert in Eureka Springs Auditorium featuring the entire opera company, orchestra and special guests&#8212;&#8211;Marquita Lister, Louis Otey and Antonio Nagore, world famous opera singers who began their careers at Opera in the Ozarks.    Also featured will be an original opera, based on the story of RUTH from the Bible.  This opera was written for us by the esteemed Dr. Isacc Van Grove, our former Artistic Director.    Join us as we return to the site which was the birthplace of Opera in the Ozarks.  Curtain is at 7:15 and tickets are only $10.   <img alt="Opera In The Ozarks, Eureka Springs" src="http://www.opera.org/images/330_Jim_as_Robin_1959_Cover_002_r2e.jpg" title="Opera In The Ozarks, Eureka Springs" class="alignnone" width="198" height="263" /><span id="more-671"></span></p>

<p>Oreo Cookie Dessert Recipe<br />
    * 1 (18 ounce) package Oreo cookies, divided, crushed (save 3/4 cup)<br />
    * 1/2-1 cup butter or margarine, melted<br />
    * 16 ounces Cool Whip, divided<br />
    * 8 ounces cream cheese<br />
    * 1/4 cup powdered sugar<br />
    * 1 (3 1/2 ounce) box instant chocolate pudding mix<br />
    * 2 cups milk (3.4 ounce)<br />
    * 1 (14 ounce) can eagle brand sweetened condensed milk</p>
<p>   1. Pour crushed cookies in 9&#215;13 glass dish.<br />
   2. Melt butter, pour over cookies.<br />
   3. Mix 1/2 of the cool whip, cream cheese and powdered sugar, spread on top.<br />
   4. Mix pudding with milk and sweetened condensed milk; beat until thick, spread on top.<br />
   5. Spread on other 8 oz Cool Whip.<br />
   6. Sprinkle with leftover cookies.<br />
   7. Refrigerate over night.</p>

			<content:encoded><![CDATA[<p>Opera In The Ozarks ?? I know what you are thinking &#8211; you must be kidding, right? Well, no actually. Although the Ozarks are most famous for bluegrass and country music and musicians, there is a music academy here in Eureka Springs that has been in existence since 1950 that is dedicated to the Fine Arts, concentrating on vocal and instrumental music and dramatic art. The name of the academy is Inspiration Point Fine Arts Colony. <img class="alignright" title="Opera In The Ozarks" src="http://www.opera.org/images/190_carmen.jpg" alt="Opera In The Ozarks" width="190" height="293" /></p>
<p><span id="more-661"></span>The effectiveness of training received at Inspiration Point has been demonstrated many times over by the successes by alumni in their opera careers. Several are internationally famous. At least eight are or have been with the New York Metropolitan Opera company. Many others are with famous opera companies in Chicago, New York City, San Francisco, Houston, Switzerland, and Germany.</p>
<p>Inspiration Point continues to grow and flourish. What began in 1950 as a summer music camp, has evolved into a mecca where university students and graduates in Voice, Instrumental Music, and related arts come to prepare for professional careers, a place where opportunity, music, artist and audience meld with the beauty and splendor of the Ozark Mountains. Beginning in 1993, the strong focus on opera led to a company name, OPERA IN THE OZARKS at INSPIRATION POINT.</p>
<p>One of the outstanding features of the program is that every participant is afforded an opportunity to perform in fully produced operas, an evening scenes program or an educational outreach program taken to the several areas in Northwest Arkansas. Four weeks of rehearsal and four weeks of performances are under the supervision of a professional staff. Opera in the Ozarks is located seven miles west of Eureka Springs,Arkansas, on scenice Route 62. One of the most picturesque spots in the south central U.S., Inspiration Point is a look-out site situated atop Candy Rock Mountain between the beautifulWhite River Valley and Beaver Lake.</p>

Donna and I have found a little time to get out enjoy the scenery lately on the bike. The riding here is fantastic. June looks to be a busy month in Eureka Springs with lots of things to do. <p>PRALINE PECAN CHEESECAKE</p>
<p>Crust:<br />
1 pkg. Pillsbury Plus butter recipe cake mix<br />
1/2 c. softened butter<br />
(Reserve 1 cup of crust mixture for topping)</p>
<p>Filling:<br />
3 (8 oz.) pkg. cream cheese, softened<br />
1/3 c. sugar<br />
1 to 1 1/2 tsp. rum extract<br />
4 (1.2 oz.) toffee candy bars, coarsely crushed<br />
3 tbsp. flour<br />
3 eggs</p>
<p>Topping:<br />
1 c. reserved crust mixture<br />
1/2 c. packed brown sugar<br />
1 c. chopped pecans</p>
<p>Garnish:<br />
1/3 c. caramel ice cream topping</p>
<p>Heat oven to 325 degrees. Combine cake mix and butter in large bowl, mixing at low speed until crumbly. Set aside 1 cup of mixture for topping. Press remaining mixture in bottom and 1 1/2 inches up sides of ungreased 9 or 10 inch springform pan.</p>
<p>In same bowl, combine cream cheese, sugar, flour, and rum extract; beat until smooth. Add eggs and mix well. Stir in crushed candy bars and pour into crust lined pan. In small bowl combine reserved crumb mixture, brown sugar, and pecans; blend well. Sprinkle evenly over filling.</p>
<p>Bake at 325 degrees for 70-85 minutes or until center is set and topping is golden brown. Remove from oven and drizzle caramel topping over top. Bake for 8-10 minutes more to set topping. Cool 30 minutes.</p>
<p>Run knife around sides of pan to loosen. Cool completely. Remove sides of pan and refrigerate 4-5 hours or overnight. Store in refrigerator. 16 serving.</p>

<p>Yes, underground tunnels run below the street adjacent to several buildings in town. These tunnels were known to locals but were never open to the public before. A little history about the tunnels &#8211; although rumors say they were used for secretive entrance and exit by gangsters and others to gambling dens and houses of ill repute, their real reasons for existence were very practical.</p>
<p>Main street actually runs parallel to Leatherwood Creek and in the early years of Eureka Springs Main Street was known as Mud Street because rains would make the creek overflow into the street, flooding buildings and generally making a muddy mess. Because of this, the street was elevated, leaving the first floor of existing buildings below street level. Victorian-era fire codes required that basements and floors below ground level had an emergency exit since fires from wood and coal heating were common. Another reason for the tunnels was that it was impractical to pile dirt directly against the buildings to raise the street since windows and doors were facing the street on many buildings.  The tunnels then performed dual functions of holding back the fill dirt from the buildings and offering a below-ground fire escape! As heating appliances became more modern and safe, the tunnels were unused for many years and sealed off in places for various reasons.</p>
<p>Portions of the remaining tunnels are available for public tour. Tours begin at Basin Spring Park  on Fridays, Saturdays and Sundays at 2:00 pm. Tickets are $12 per adult and are available 1 hour prior to the tour at the kiosk in the park or at the Chamber of Commerce.</p>

<p>RECIPE<br />
Orange-Kissed Breakfast Bread Pudding<br />
Ingredients<br />
2    cans (13.9 oz each) Pillsbury® refrigerated orange flavor sweet rolls with icing (16 rolls)<br />
2    cups half-and-half<br />
2    whole eggs<br />
2    egg yolks<br />
1/2    cup sugar<br />
3/4    cup Walnut Halves and Pieces, coarsely chopped<br />
1/4    cup half-and-half<br />
1/4    cup Butter<br />
1    teaspoon vanilla</p>
<p>Directions<br />
1.    Heat oven to 400°F. Spray large cookie sheet with No-Stick Cooking Spray. On cookie sheet,<br />
place rolls 1 inch apart. Reserve icing. Bake 8 to 10 minutes or until golden brown. Remove from cookie sheet to<br />
cooling rack. Cool completely, about 10 minutes.<br />
2.    Reduce oven temperature to 350°F. Spray 8-inch square pan with cooking spray. Using serrated knife, cut<br />
rolls into 1/2- to 1-inch pieces; set aside.<br />
3.    In large bowl, mix 2 cups half-and-half, whole eggs, egg yolks, sugar and walnuts until well blended. Gently<br />
stir in roll pieces. Spread in pan.<br />
4.    Bake at 350°F 50 to 55 minutes or until toothpick inserted in center comes clean and top is deep golden<br />
brown. Cool 30 minutes.<br />
5.    Meanwhile, in 1-quart saucepan, heat icing (from both containers), 1/4 cup half-and-half and butter over low<br />
heat, stirring occasionally, until butter is melted. Stir in vanilla.<br />
6.    Cut warm bread pudding into 9 servings. Drizzle with sauce.</p>
